Regaining your appetite with mouth-watering food.

Spicy Lemon Grass Salad ( Yum Ta Kai )



   The hot and humid summer weather favors bacterial growth, so you should pay special attention to food safety in order to prevent many diseases and infections that occur through consuming food and drinks.
   Gastroenteritis is an inflammation of the intestines that causes many symptoms, including diarrhea, abdominal cramps, nausea, stomach ache, vomiting, fever and loss of appetite.
   The most common causes of gastroenteritis in adults are viruses and bacteria that can cause food poisoning. Gastroenteritis is contagious, and is transferred through contaminated foods and drinks. To prevent gastroenteritis, it is recommended to keep hands clean all the time and to clean kitchen benches and utensils. You should also make sure you cook food well, store it appropriately and get rid of leftovers and waste. Avoid buying foods that are uncovered and drinks that were prepared manually outside the home.
    For two weeks I was  hospitalized because of gastroenteritis. I couldn’t eat anything but liquid foods. Doctors can heal, but they can’t give your appetire back to you. I lost my appetite for five days, but all the sudden I got a vision of mouthwatering food that no one can resist- Spicy Lemon Grass Salad ( Yum Ta Kai ), which helped me regain my appetite for good. Ingredients are not too hard to find (even in America); it’seasy to prepare and it is quite delicious.




Preparation:

1 cup thinly sliced lemongrass
1 cup minced chicken (cooked)
10 big shrimps (peeled, de-veined and steam cooked)
3 tbsp. sliced chili peppers (or as much as you like)
1 cup shallots (sliced)
1 cup sliced scallion and coriander
1 cup cashew nuts (some people like to use Salted Peanuts or Pistachio Nuts instead)
1 handful mints
1/4 cup fried dry shrimps
1 tbsp. crushed coriander roots
3 and 1/2 tbsp. fish sauce
4 and 1/2 tbsp. lime juice
1/4 tbsp. palm sugar (it can be a pinch of regular sugar if you can not find palm sugar)

Cooking Instructions:

1. In a big stainless steel bowl, add fish sauce lime and palm sugar. Stir the mix until the palm sugar is dissolved. Taste and change it to the way you like. Make sure the balance of 3 tastes is right. We’ll add chili after we finish everything because the spiciness the stop your ability to taste the saltiness, sourness and sweetness.
2. Now, add minced chicken and shrimps. Then add fried dry shrimps, lemongrass, scallion, coriander, mints, shallot and coriander roots.
3. Lastly, add the sliced chilli as much as you like. Mix well and serve it with fresh betel leaves.


Then place Lettuce on plate then put Spicy Lemon Grass Salad over it an topping with 2-5 leaves of mints and serve. Bon Appetit.
